
Rating my favourite fungi textures
And as a lover of fungi, I have felt many, so I have made this post so that I can share my ratings of some of my favourite textures with you, dear reader. You’re very welcome.
This is not an exhaustive list, there are many fungi I would like to feel that I haven’t had a chance to yet, and many I’m sure will surprise me in future. But for now, this is it.
In no particular order:

February Fungi of the Month: Ruby Elf Cup
Febuary’s fungi of the month is the…. Scarlet Elf Cup (Sarcoscypha austriaca). But also the Ruby Elf cup (Sarcoscypha coccinea).
Beautiful spore shooters! That to me herald the end of winter and start of spring alongside the snowdrops.

Making Jelly Ear “Mushroom Jaffa Cakes”
Did you know you can make sweets out of fungi? In this recipe I made wood ear/jelly ear fungi (Auricularia auricula-judae) into mushroom “jaffa cakes” . Weird and wonderful!

January’s fungi of the month: Jelly Ear
for our first fungi of the month I’ve chosen one many people have probably heard of: The wood ear, or jelly ear.
The reason? Well it was the first fungi I found this year on the second day of January so it felt very appropriate to share as the first fungi of the month.
There’s also very few fungi that are out and about this time of year, let alone edible ones. And the wood ear is pretty abundant, and leaves a smile on my face whenever I come across it.
